Walnut and Chicken Cubes Stir-fry Recipe
This traditional Chinese food recipe is featured by the walnuts that added, benefits your brain for sure.

Ingredients:
7 oz./ 200 g chicken breast
1 cup walnut, cut into cubes
2 green peppers, stemmed, cut into cubes
2 slices ginger, minced
2 garlic cloves, minced
1 tbsp. chopped scallion
1 tbsp. light soy sauce
1 tbsp. cornstarch
1 tbsp. ground black pepper
1 tbsp. rice vinegar
1 tbsp. salt
1 egg white
1-2 tbsps. chili bean sauce
3 tbsps. vegetable oil, for stir-frying
Directions:
1. Cut the chicken breast into small cubes, combine with 1 tbsp. salt, 1 tbsp. light soy sauce, 1 tbsp. cornstarch, 1 tbsp. ground black pepper, and 1 egg white, mix well and let sit for 15 minutes.
2. Preheat a wok over high heat for 1 minute, then heat 3 tbsps. vegetable oil until hot, add walnuts and stir fry over low heat until golden, which will take about 1 minute, then remove to a plate for later use.

3. Saute ginger and garlic with the remaing oil in the wok until aromatic, about 30 seconds, then add the marinated chicken breast cubes.
4. Stir fry over high heat until the chicken breast turns white, then add green pepper cubes, stir into 1 tbsp. light soy sauce.
5. Put back the walnuts, seaon with salt, add chili bean sauce if desired.
6. At last, drizzle with rice vinegar, top with chopped scallion, stir briefly and dish out, serve hot.
