Salmon Mushroom Rice Recipe
This satisfying, low-fat salmon mushroom rice is full of flavor, and very nutritious. You only need a couple of easy-to-get ingredients, and a couple of minutes to cook.

Utensils:
Saucepan, bowl.
Serves 1
Ingredients:
1 cup rice
5 black mushrooms, cut into fingers
2 salmon steaks or fillets, cut into 1/2-inch thick, 1-inch long cubes
1 tbsp. chopped scallion
1 tbsp. light soy sauce
1 tbsp. rice wine, or dry sherry

Directions:
1. Place 1 cup rice in a saucepan with 1 cup water to cover, sprinkling with 1 tbsp. light soy sauce and rice wine, scatter over the mushroom strips, then top with the salmon cubes.

2. Cook over medium heat until the rice is chewy.
3. Remove to a bowl, for an added touch, try garnishing with chopped scallion before serving.
