Authentic Salmon Filet Recipe
This authentic salmon filet recipe lets the salmon be the star, and the flavorful marinade sauce gently cooks the fish in a tasty manner. See how to make a mouth-watering tilapia at home.

Ingredients:
2 center-cut salmon filet, 3 oz. each, boneless, skinless
4 cloves crushed garlic
5 slices fresh ginger, peeled
3-6 tbsps. Szechuan peppercorns
10-15 red peppers, stemmed
10-15 tbsps. vegetable oil
Marinade:
1 egg white
1-2 tbsps. Chinese rice wine, or dry sherry
1-2 tsps. chicken essence
1-2 tbsps. cornstarch
1-2 tsps. cayenne/ground red pepper
2 tsps. salt, or to taste
Directions:
1. Rince and drain the filet well, combine with marinade in a mixing bowl, toss until the filets are coated and let them marinate for 30 minutes.
2. Preheat a wok over high for 1 minute before adding 2 tbsps. vegetable oi, heat until hot, then saute the ginger and garlic over medium-high flame, when it begins to sizzle, and before it starts to brown, discard them with ladle.
3. Add another 6-10 tbsps. vegetable oil into the wok in which it was cooked, when hot, reduce heat to low, deep fry 3-6 tbsps. Szechuan peppercorns for about 1-2 minutes, or until aromatic.

4. Add red peppers, keep cooking for about 1 minute over low heat.

5. Add filets and cook until done, salt as you would, mix well and transfer to a big warmed bowl, let cool 10 minutes before serving.

Tips:
1. At step 3&4, keep on low heat while cooking peppercorns and red peppers.
