Bitter Melon Shrimp Stir-fry Recipe
This easy-to-make recipe features a terrific combination of the meaty shrimp and tangy bitter melon.

Ingredients:
12 shrimp, peeled, deveined
1 bitter melon, seeded, cut into strips
1 tbsp. chopped scallion
1 green pepper, cut into thin strips
1 tbsp. chopped coriander
1 tbsp. ground cumin
1 tbsp. chili powder
2 tbsps. vegetable oil for stir-frying

Directions:
1. Preheat 2 tbsps. vegetable oil in a wok over high heat until hot, add chopped scallion and bitter melon, cook over medium heat for about 3 minutes, or until the bitter melon is nearly cooked.

2. Sprinkle with 1 tbsp. chili powder and ground cumin, pour into 1/3 cup water, keep stirring for a while, then add back the shrimp, green pepper strips, and coriander, stirring and tossing to mix everything together, about 3 minutes.
3. At the last minute of cooking, taste and adjust seasoning as desired, mix well and serve hot.
