Braising Tilapia Recipe

Serves 2
Ingredients:
1 tilapia
2-3 slices ginger, peeled
1 tbsp. chopped scallion
1 tbsp.freshly chopped coriander
2 tbsps. vegetable oil for stir-frying
Marinade:
1-2 tsp. salt, or to taste
1-2 tbsps. light soy sauce
1tbsp. cornstarch, mixed in 1-2 tsp.water
Directions:
1. Before cook, discard the scales, gills and the internal organs of the tilapia, then rinse well through running water, cut into sections and coat with the marinade in a plate. let marinate for about 20-30 minutes.

2. Preheat a wok over high heat for 1 minute before adding 2 tbsps. vegetable oil, heat until the oil is hot, then saute the chopped scallion and ginger until aromatic, about 20 seconds, do not brown, add the tilapia back into the wok, stir fry bothsides for about 2 minutes.

3. Pour 3-5 cups water into the wok, cover and let braise over low heat for 20-30 minutes, or until cooked.

4. Dish out onto a plate, garnishing with a sprinkling of chopped coriander before serving if desired.
