Octopus and Green Pepper Stir-Fry Recipe
The crispy octopus and tangy pepper is a terrific combination in this easy-to-prep recipe.

Utensils:
Pot, wok, colander, plate.
Serves 2
Ingredients:
7 oz./ 200 g octopus
1 carrot, sliced thin
1/2 stalk scallion, cut into sections
3 green peppers, seeded, diced
3 slices ginger
3 garlic cloves
1 tbsp. ground black pepper
1 tbsp. rice wine, or dry sherry
1 tbsp. chicken essence
1 tsp. salt, or to taste
2 tbsps. vegetable oil, for stir-frying

Directions:
1. Rinse octopus thoroughly under running water and then cut into 1-inch sections.
2. Bring a large pot of water on to a boil, blanch the octopus sections for 1 minute, or until crisp.

3. Add 2 tbsps. vegetable oil in a wok, swirl around to coat the surface until hot, saute ginger, scallion and garlic for 30 seconds, or until aromatic, do not brown.
4. Stir fry all the ingredients in the wok in which it was cooked until carrot and pepper are tender, about 3 minutes.

5. Dish out on a plate and serve hot.
