Cook time: 6 minutes
Utensils:
Wok, serving plate.
Serves 2
Ingredients:
10 oz./ 300 g shrimp, shell-on, deveined
1-2 orange peel, diced well
1 tbsp. minced fresh ginger
1 tbsp. chopped scallion
1 tbsp. light soy sauce
1 tbsp. chicken essence
1 tbsp. salt, or to taste
2 tbsps. white sugar, or to taste
5 tbsps. vegetable oil

Directions:
1. Add 5 tbsps. vegetable oil in a wok, heat over medium-high flame until hot, cook the shrimp for about 1-2 minutes until golden, remove them and place on a plate for later use.
2. Pour off all but 1 tbsp. vegetable oil from the wok, saute the ginger, scallion, and orange peel over medium heat for 20 seconds, or until aromatic.
3. When the scallion begins to sizzle, and before it starts to brown, add the shrimp and all the seasonings back into the wok in which it was cooked, stir fry over medium heat for another 2-3 minutes, or until cooked.
