Filet Mignon Ketchup Stir-fry Recipe
Coated with a quick ketchup sauce burst with flavor, filet mignon ketchup stir-fry recipe can give you a good impression of Chinese food.

Ingredients:
7 oz./ 200 g filet mignon, cut into thin strips
1 stalk scallion, chopped fine
1 ginger slice, minced
2 garlic sloves, sliced
1 tbsp. flour
2 tbsps. white sugar
1 tbsp. ketchup
1 tsp. salt, or to taste
2 tbsps. cornstarch
5 tbsps. vegetable oil for stir frying
Marinade:
1 tbsp. ground Szechuan peppercorn
1 tbsp. rice wine, or dry sherry
1 tbsp. white sugar
1 tsp. salt, or to taste
Directions:
1. Combine filet mignon with the marinade in a bowl, mix well and let them marinate for about 30 minutes.
2. Combine 1 tbsp. cornstarch, 1 tbsp. flour, with 4 tbsps. water in a separate bowl, blend well until smooth, the batter should be thick. Coat each filet mignon with the batter lightly.

3. Place a wok over medium high heat, heat 5 tbsps.vegetable oil until it is shimmering on the bottom and very hot, but not yet smoking, deep fry the coated filet mignon over medium heat until nicely browned, then drain well in a colander, dry on kitchen papers and place on a plate.


4. Whisk 1 tbsp. ketchup, 2 tbsps. white sugar, 1 tsp. salt, and drops water in a separate bowl, set aside for later use. In another bowl, mix 1 tbsp. cornstarch with 4 tbsps. water for the thickener.
5. Pour off the excess oil but 2 tbsps. from the wok, heat until hot, saute chopped scallion, garlice and ginger briefly until aromatic, abour 30 seconds. Then reduce to low heat and pour into the ketchup sauce mixture, stirring, swirl into the cornstarch and water mixture 1 minute later,keep cooking.
6. At the last minute of cooking, put back the cooked filet mignon, tossing to coat the sauce lightly.
7. Turn off the heat and serve on a plate immediately.
