Prawn Lotus Seeds Stir-fry Recipe
Here the crispy lotus root and fragrant prawn combine to make a fantastic Chinese stir-fry recipe, it is simple to master and fast to make.

Utensils:
Wok, big mixing bowl, serving plate.
Serves 2
Ingredients:
1/3 cup green peas
1/2 cup lotus seeds
10 prawns, peeled, deveined
1 tbsp. minced ginger
1 tbsp. chopped scallion
1 tbsp. rice wine, or dry sherry
1 tsp. salt, or to taste
1 tbsp. cornstarch
1 tsp. white sugar
1 tbsp. cornstarch, mixed with 4 tbsps.water.
2 tbsps. vegetable oil for stir-frying

Directions:
1. Put prawns into a big mixing bowl, combine with 1 tbsp. cornstarch, 1 tbsp. rice wine, 1 tsp. salt, mix well and let marinate for about 30 minutes.
2. Preheat a wok over high for about 1 minute before adding 2 tbsps. vegetable oil, heat until hot, then saute scallion and ginger until aromatic, about 30 seconds, stir fry prawns over medium high heat until pink.

3. Add lotus seeds and green peas, continue to cook, season with salt and sugar, swirl into the cornstarch and water mixture, stir briefly to mix well.

4. Remove to a plate and serve hot.
