Spicy Salmon filets Stew Recipe
This is the spicy salmon filets stew recipe that is often featured at Chinese restaurants, which features the secret ingredient – chili bean sauce, also the salmon filets are parboiled and then simmered with spicy chilies in a tasty sauce.

Ingredients:
2 cups bean sprouts
14 oz./ 400 g salmon filets
2 stalks celery, cut into 1-inch sections
1 tbsp. chopped scallion
3 slices ginger, minced
5 garlic cloves, sliced
1 cup chicken stock
1 tbsp. Szechuan peppercorn
10 chilies, diced
1 tbsp. light soy sauce
1 tbsp. cornstarch
1 tsp.salt, or to taste
1 tbsp. chili bean sauce
1 tbsp. rice wine, or dry sherry
3 tbsps. vegetable oil for stir-frying
Directions:
1. In a big mixing bowl, combine salmon filets with 1 tbsp. cornstarch, 1 tbsp. rice wine, and 1 tsp. salt, mix them well and let marinate for 20 minutes before cooking.
2. Preheat a wok over medium high heat for at least 30 seconds before adding 3 tbsps. vegetable oil, drizzling to coat both the surface and the bottom of the wok until hot, saute Szechuan peppercorns, chopped scallion, ginger, garlic, and chili bean sauce over medium heat for about 30-60 seconds, or until aromatic.
3. Add bean sprouts, celery, and chilies, stir fry for a while, pour into 1 cup chicken stock, swirl into 1 tbsp. light soy sauce and bring them to a boil, then reduce to simmer for another 2-3 minutes.

4. When finished, ladle the bean sprouts and celery into a warmed serving bowl, reserve the sauce.
5. Bring a large pot of water to a boil, cook the marinated salmon filets until nearly done, which will take about 3 minutes, drain well.

6. Add salmon filets into the sauce, continue to cook for another 1-2 minutes before pouring into the serving bowl.

7. Mix well and serve hot.
