Salmon with Scallion Stew Recipe

This is a good seafood recipe – salmon filets stewed with scallion, ginger, chilies, and other Chinese seasonings – perfect for the beginning Chinese cooking.

Prep time: 20 minutes
Cook time: 10 minutes

Utensils:
Wok, bowl, serving bowls.

Serves 2

Ingredients:
14 oz./ 400 g salmon filets, cut into 1-inch sections
1 stalk scallion, cut into 1/2-inch sections
6 chilies, seeded
5 slices ginger
1 tbsp. rice wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. chicken essence
1 tbsp. cornstarch
1 tbsp. white sugar
1 cup stock
5 tbsps. vegetable oil for deep-frying
Directions:
1. Combine salmon filets, 1 tbsp. rice wine, 1 tbsp.light soy sauce, and 1 tbsp.cornstarch in a big mixing bowl, mix well and let marinate for 20 minutes.
2. Heat 5 tbsps. oil in a wok over high until it is shimmering on the bottom, but not yet smoking, deep fry salmon filets over medium high heat for about 1-2 minutes, or until cooked (P1).

3. Pour off the oil but 2 tbsps. from the wok, heat until hot, then saute chilies, scallion, and ginger until aromatic, which will take about 30 seconds, put the cooked salmon filets back, pour into 1 cup stock, stir into 1 tbsp. chicken essence, and 1 tbsp. white sugar, keep cooking over medium heat till boiling (P2).

4. Dail down to low and simmer for another 2 minutes when boiling, cook until all the flavors have fully developed.
5. Ladle into warmed bowls, serve hot (P3).
