Sweet Sour Yellow Croaker Recipe
If you like yellow croaker, you will love this classic seafood recipe, which only has a few ingredients, and takes a few minutes to cook.

Utensils:
Wok, colander, kitchen papers, serving plate.
Serves 2
Ingredients:
1 yellow croaker, about 10 oz.
1 tomato, peeled, diced
2 slices fresh ginger
2 cloves crushed garlic
2-5 lemon wedges
5 tbsps. vegetable oil
2 bunches coriander, chopped fine

Seasoning A:
1 tbsp. chili bean sauce
1 tbsp. ketchup
2 tbsps. white sugar, or to taste
1 tbsp. salt, or to taste
Directions:
1. Before cooking, discard the scales, gills, and the internal organs of the fish, rinse through running water and drain well, then season bothsides with salt, let them marinate for about 15 minutes, then drain well and dry the excess water on kitchen paper.
2. Add 5 tbsps. vegetable oil in a wok, preheat on high heat, when the oil is hot, but not yet smoking, deep fry the fish for 1 minute, then reduce heat to medium and continue to deep fry for another 5 minutes until bothsides turns golden-brown. Dry on kitchen papers and remove to a serving plate for later use.


3. Pour off all but 1-2 tbsp. vegetable oil from the wok, saute garlic and ginger until aromatic, about 20 seconds, then add tomato cubes and cook, stirring, until soften.
4. At last, add chopped coriander, seasoning A and 1/2 cup water, bring to a gentle simmer over medium heat.

5. Spoon over the fish to glaze, for an added touch, try garnishing with lemon wedges before serving.
