Tofu and Fish Recipe
This authentic Chinese seafood recipe features a delicious contrast between the meaty salmon and soft tofu. It only has a couple of easy-to-get ingredients, so it's an easy and tasty recipe to cook at home.

Wok, clay-pot, bowl.

Ingredients:
1 block firm tofu, cut into 1-inch cubes
1 salmon jowl
1 tbsp. chopped scallion
2 slices fresh ginger, cut julienne
1 bunch scallion, cut into 2-inches sections
5 tbsp. vegetable oil
2 cups water
Seasoning A:
1-2 tsps. salt, or to taste
1-2 tbsps. oyster sauce
1-2 tsps. white sugar, or to taste
Directions:
1. Rinse the jowl through running water, then cut into sections according to the picture.

2. Heat 5 tbsps. vegetable oil in a wok until the oil is very hot, but not yet smoking, deep fry tofu cubes until golden, then drain well in a colander and cut each crosswise.

3. Pour off all but 1 tbsp. vegetable oil from the wok, saute ginger strips over high heat until aromatic, about 20 seconds, then add the jowl, tofu cubes and seasoning A, cook over medium heat for another 3 minutes.

4. Preheat a clay-pot on medium heat until hot, put the scallion sections on the bottom.

5. Remove the tofu and jowl mixture to the clay-pot, pour 1 cup water, then bring to a gentle simmer over low heat until the sauce reduces.

6. For an added touch, try garnishing with chopped scallion, then let cool 5-10 minutes and serve.
