Authentic Weever Recipe
Whether it's cod, shad, or tilapia, weever recipe is a classic dish in the world. It's easy to make at home as well.

Serves 2
Ingredients:
1 weever
3 chives, shredded
3 slices ginger, cut into thin strips
3-4 tbsps. vegetable oil for stir-frying
Marinade:
1-2 tsps. white sugar
2 tbsps. light soy sauce
1 tbsp. salt, or to taste
2 tbsps. vegetable oil
Directions:
1. Before cooking, discard the scales, gills and the internal organs of the fish, then rinse well through running water. Remove the jowl and tail, then fillet and cut the remainings into 1/6-inch. thick slices. Arrange on a plate neatly.

2. Put a large pot of water on to boil, parboil the fish in boiling water until nearly cooked. Then remove to a plate.

3. Pour off water from the pot, add in the marinade and bring to boil over medium heat.
4. Spoon the marinade over the fish, sprinkle with shredded chives and ginger strips lightly.

5. Heat 3-4 tbsps. vegetable oil in another wok until hot, then drizzle over the fish evenly, serve hot.
