Winter Melon and shrimp Soup
Winter melon and shrimp soup is very light, but not lacking in great tastes. And in fact, the combination of winter melon and shrimp is one of those heaven-made matches that you simply must try if you haven’t already.

Utensils:
Wok, bowl.
Serves 2.
Ingredients:
5 shrimp, peeled, deveined
14 oz./ 400g winter melon, peeled
2 slices ginger
1 tbsp. chopped scallion
1 tbsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
1-2 tbsps. freshly chopped cilantro
Directions:
1. Cut the winter melon into thin strips, about 1-inch length.

2. Preheat a wok over medium high heat for 30 seconds, then add 2 tbsps. vegetable oil and drizzle until hot enough, about 30 seonds, then saute ginger and scallion for about 30 seconds, or until aromatic, do not brown.
3. Cook winter melon strips, stirring over medium heat for about 2 minutes.
4. Pour into enough water, that covers the winter melon, then add shrimps, bring to a boil over high heat.

5. Season with salt as desired, sprinkling with chopped cilantro before serving.

6. Remove from the wok and ladle into warmed bowls, serve.
