Black Mushroom and Chicken Soup Recipe
The best combination of chicken and mushroom makes this perfect soup, black mushroom and chicken soup is nutritious as well as tasty, and all the ingredients are easy to get in your refrigerator.

Serves 2
Ingredients:
1 chicken leg, chop into chunks
3 asparagus, rinse well and cut into sections
20 dried black mushrooms
2 tbsps. chopped scallion
3 slices ginger
1 tsp. salt, or to taste
1 tbsp. rice wine, or dry sherry

Directions:
1. Soak the dried black mushrooms in warm water, about 20 minutes, then trim off the stems, cut into half.

2. Add 2-3 cups water in a wok, add chicken, ginger slices, and 1 tbsp. rice wine, cook over high heat until boiling.
3. When boiling, add mushrooms, add asparagus when boils again.
4. Bring them to a boil again, then reduce to low and simmer for another 30 minutes, or until the chicken has done.

5. Season with salt when nears done, remove to a bowl, sprinkling with chopped scallion before serving if desired.
