Cop Radish Soup Recipe
This satisfying, low-fat cop and radish soup is a Chinese classic, it is full of flavor, and very nutritious.

Ingredients:
5 cod fillets, cut into 1-inch cubes
7 oz./ 200 g Chinese white radish, cut into strips
1 tbsp. chopped scallion
1 tbsp. rice wine
2 garlic cloves, minced
1 tbsp. freshly chopped cilantro
1 tbsp. ground black pepper
1 tbsp. light soy sauce
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over medium high heat for 30 seconds before adding 2 tbsps. vegetable oil, swirl the oil to coat both the sides and the surface of the wok, saute garlic briefly when the oil is hot.
2. Add Chinese white radish when the garlic starts to brown, stirring over medium heat for about 3 minutes.

3. Pour into enough water, then add cod fillets back, bring them to a boil.

4. Swirl into 1 tbsp. rice wine, 1 tbsp. light soy sauce, 1 tbsp. ground black pepper, and 1 tsp. salt, mix well and keep on a steady simmer.
5. Ladle into warmed bowls, top with a sprinkling of chopped cilantro and scallion before serving.
