Flammulina Tomato Soup
Give these differently delicious flammulina tomato soup a try when you want something a little bit different for that special dinner.

Serves 3
Ingredients:
3 tomatoes
4 oz. / 150 g pork tenderloin, cut into thin strips
2oz. / 40 g flammulina, shredded
1 tbsp. chopped cilantro
2 cloves crushed garlic
2oz. / 40 g cloud ears, soaked and cut julienne
2 bowls water
Marinade:
1 tsp. cornstarch
1 tsp. vegetable oil
1 tsp. chicken essence
1 tbsp. rice wine, or dry sherry
Seasonings:
1 tsp. chicken essence
2 tbsps. vegetable oil
1 tsp. sesame oil
1 tbsp. rice wine, or dry sherry
1 tsp. salt,or to taste
Directions:
1. In a mixing bowl, gently combine pork with marinade, mix well and let sit for 15 minutes.

2. Cut tomatoes according to the picture.

3. Heat 2 tbsps. vegetable oil in a wok till hot, then saute cruhed garlic until aromatic, which will take about 20 seconds. Add tomato cubes and stir fry over high for 2 minutes.

4. Add cloud ears and 1 tbsp. rice wine, and 1-2 bowls water, bring to a boil, then reduce to simmer for 5 minutes.
5. Add the marinated pork strips, cook until white, season with 1 tsp. salt and 1 tsp. chicken essence as desired.
6. At the last minute of cooking, add flammulina, drizzle 1 tsp. sesame oil, sprinkle with 1 tbsp. chopped cilantro if desired.
7. Remove from heat to a serving bowl and serve immediately.
