Prawn and Winter Melon Soup
The perfect combination of prawn and winter melon is one of those heaven-made matches that you simply must try if you haven't already. Prawn with winter melon soup is very light, but not lacking in great tastes.

Serves 2
Ingredients:
5 prawns, peeled, deveined
14 oz./ 400 g winter melon, peeled
1 tbsp. chopped scallion
2 slices ginger
1 tbsp. salt, or to taste
1-2 tbsps. freshly chopped cilantro
2 tbsps. vegetable oil for stir-frying
Directions:
1. Cut the winter melon into 1-inch length strips.

2. Preheat a wok over medium high heat for 30 seconds, then add 2 tbsps. vegetable oil and drizzle, let it coats both the sides and the bottom of the wok, when the oil is hot, saute chopped scallion and ginger slices for 30 seconds, or until aromatic.
3. Add winter melon strips and cook, stirring over medium heat for about 2 minutes.
4. Pour into cups water (water must cover the winter melon), then add the prawns, turn heat back to high and bring to a boil.

5. Taste and season with salt, top with a sprinkling of chopped cilantro before serving if desired.

6. Ladle into warmed bowl, serve hot.
