Spareribs and Kelp Soup

Serves 2
Ingredients:
14 oz. / 400 g spareribs
1 piece of kelp, soat in warm water for 3-4 hours ahead
3 slices ginger
1-2 tbsps. rice vinegar
1 star anise
Directions:
1. Rinse the soaked kelp well through running water, then cut into 1-2 inches squares.
2. In a large pot, heat enough water until boiling, then parboil the spareribs over medium high heat for 2-4 minutes, use a spoon to remove the froth.
3. Drain the spareribs well and remove to the clay-poy, add enough water, ginger, and star anise, turn on heat to high.

4. Add kelp square into when the water boils 10 minutes later.
5. Add 1-2 tbsps. rice vinegar, reduce heat to medium, cook for another 20 minutes, then simmer over low heat until cooked.
6. Season with salt, and serve hot in bowls.
