Celery with Dried Tofu Stir-fry Recipe
This is an easy-to-master stir-fry recipe, which features a delicious contrast between tangy celery and tender tofu, give it a go.

Ingredients:
5 oz./ 150 g celery, cut into 1-2 inches sections
7 oz./ 200 g dried tofu, cut into 1-inch sections
1 red pepper, seeded, cut into thin strips
1 tbsp. chopped scallion
1 tsp. salt, or to taste
2 tbsps.vegetable oil for stir-frying

Directions:
1.Bring a large pot of water to a boil, blanch the celery for about 2 minutes, or until the celery turns jade green, then drain well in a colander and set aside for later use.

2. Preheat a wok over high until hot before you add 2 tbsps. vegetable oil, then swirl to coat surface and saute chopped scallion until aromatic, about 20 seconds.
3. Put celery back, stir fry over medium high heat for about 1 minute.

4. Add dried tofu and red pepper strips, stirring briefly to mix everything together.

5. Season with salt as you stir frying, remove from heat to a plate, serve hot.
