Crispy Chicken Tofu Pie
This crispy chicken tofu recipe is an easy, elegant and delicious course, paired with tasty cheese, this classic Chinese cuisine can really give you a refreshing taste.

Serves 2
Ingredients:
7oz. / 200 g chicken breast, shredded into small pieces
1 block firm tofu, about 7oz. / 200 g
2oz. / 40 g dried cloud ears
1 tbsp. chopped scallion
3 crushed garlic cloves
2 slices fresh ginger, minced
Cheese, as needed
1 tsp. ground black pepper
1 tsp. sesame oil
1 tbsp. white sugar
1 tsp. salt, or to taste
Directions:
1.Cut tofu into small cubes, drain them according to the tips below, meanwhile, soaked dried cloud ears in warm water for about 20 minutes, then cut into small pieces.
2. Mash tofu cubes with the back of a spoon, stir into all the other ingredients and seasonings except cheese, mix well.

3. Pour the mixture evenly into a baking tray, sprinkle with a layer of cheese. Then bake for about 3-8 minutes, or until cheese melts and yellow.


4. Remove from the oven, cut and arrange on a serving plate, when cool enough to handle, serve.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of tofu, don't worry, just drain it by tiltting the plate if needed.
