Crispy Pork Tofu Roll
If you like Spring Rolls or Egg Rolls, you might love this crispy pork tofu rolls. This classic Chinese cuisine is simple to master and quick to do.

Prep time: 20 minutes
Cook time: 10 minutes
Utensils:
Wok, bowl, 2 serving plates.
Serves 3
Ingredients:
7oz. / 200 g pork, thinly sliced
1 block firm tofu, about 17oz.
3 tbsps. vegetable oil for pan-frying

Marinade:
2 tbsps. light soy sauce
1 tbsp. rice wine, or dry sherry
1 tbsp. cornstarch
1 tbsp. white sugar
Directions:
1. Cut tofu into 2-inches long cubes, drain well according to the tips below.
2.Wrap thin pork slices around each tofu cubes tighty according to the picture below, then set aside on a plate.

3. Mix all the marinade in a bowl for sauce, swirl it over the pork tofu rolls evenly, let marinate for 20 minutes.

4. Preheat a wok over medium-high heat for 1-2 minutes before adding 3 tbsps. vegetable oil, heat until the oil is hot, but not yet smoking, pan fry each pork tofu rolls until bothsides are golden, which will take about 2 minutes.
5. Remove from heat, and then arrange neatly on a serving plate, let cool 5 minutes before serving, dip with ketchup or your favorite sauce if desired.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of tofu, don't worry, just drain it by tiltting the plate if needed.
