Kung Pao Tofu Stir-fry Recipe
Similar to Kung Pao chicken, Kung Pao tofu is famous as well as delicious, and it is perfect for vegetarians.

Cook time: 10 minutes
Utensils:
Wok, colander, serving plate.
Serves 2
Ingredients:
10 peanuts
1/2-1 block firm tofu, about 200 g / 7 oz.
1/2 carrot, cut into small cubes
1 asparagus, cut into small cubes
2 slices ginger, crushed
2 garlic cloves, crushed
1 stalk scallion, chopped
5 chilis, chopped
1 tbsp. Szechuan peppercorns
1 tsp. salt, or to taste
Seasonings:
1 tbsp. light soy sauce
1 tbsp. rice vinegar
1/2 tbsp. chicken essence
1 tbsp. rice wine, or dry sherry
1 tbsp. sesame oil
1/2 tbsp. white sugar
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
Directions:
1. Drain the tofu well before use according to the tips below.
2. Preheat a wok over medium high heat for about 30 seconds before adding 2 tbsps. vegetable oil, stir fry peanuts over low heat until cooked, about 1 minute. Then drain well and set aside for later use.

3. Add more vegetable oil into the wok, deep fry the drained tofu cubes over high heat until golden, drain well and set aside.

4. Add all the seasonings in a bowl for sauce.
5. Pour off all but 2 tbsps. vegetable oil form the wok, add Szechuan peppercorns, ginger, garlic cloves, and carrots when the oil is hot, stir fry over medium heat until carrot turns color.

6. Add chilis, scallion, and asparagus, continue to cook over high heat for 1-2 minutes.

7. Put the deep-fried tofu cubes back into the wok in which it was cooked, stir fry for a while.

8. Stir into the sauce, season with salt, add peanuts, stir fry briefly to mix everything well.

9. Remove from the heat to a plate, serve hot.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of it, no worries, drain it by tiltting the plate if needed.
