Mushroom and Tofu Stir-fry Recipe

This extremely basic mushroom and tofu stir-fry recipe lets the tofu be the star. And the juicy mushroom add a subtle accent to this delicious classic Chinese food recipe.

Utensils:
Wok, 3 bowls, 2 serving plates.

Serves 3.

Ingredients:
1 block firm tofu, about 7oz.
1 red hot pepper, seeded, finely chopped
5 dried black mushroom
1 tbsp. chopped scallion
2 slices ginger, cut julienne
3-5 tbsps. vegetable oil for pan-frying
1 tbsp. chili bean sauce
1 tbsp. light soy sauce
1 tsp. salt, or to taste

Directions:
1. Cut tofu into bite-sized cubes, about 1-inch long, drain well according to the tips below.
2. Soak black mushrooms for about 20 minutes in a bowl, drain well, trim off the stems, and cut into thin strips.
3. Heat 3-5 tbsps. vegetable oil in a wok until it is very hot, but not yet smoking, pan fry each tofu cubes over medium high heat for 1-2 minutes, or until golden.
4. Pour off all but 2 tbsps. vegetable oil from the wok, heat until the oil is hot, saute chopped scallion and ginger briefly until aromatic, about 30 seconds, add black mushrooms, stirring and tossing over medium heat for 2 minutes, sprinkle 1 tbsp. chili bean sauce and 1 tbsp. light soy sauce over as you stir fry.

5. Add back the tofu cubes into the wok, add 1/2 cup water, leave to a simmer over low heat until sauce thickens.
6. Taste and season with salt if necessary, then remove to a serving plate, serve hot.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of tofu, don’t worry, just drain it by tiltting the plate if needed.
