Silky Tofu Recipe
The tofu in this recipe is silky and tasty, and also has a flavor of fish.

Wok, bowl, serving plate.
Serves 2
Ingredients:
3 oz./ 80 g pork, grated
7 oz./ 200 g tofu, cut into cubes
1 tbsp. minced garlic cloves
1 tbsp. minced ginger
1 tbsp. chopped scallion
8 chilis, cut into pieces
3 tbsps. vegetable oil, for stir-frying
Seasonings:
1 tbsp. light soy sauce
1 tbsp. salt, or to taste
1 tbsp. rice vinegar
1 tbsp. sugar, or to taste
1 tbsp. chicken essence
1 tbsp. chili bean sauce
Directions:
1. Heat oil in a wok until hot, then stir fry pork over low heat until white.
2. Saute ginger, scallion, and garlic until aromatic, about 30 seconds, do not brown.
3. Add cups water or chicken stock.
4. Add all the seasonings and tofu cubes, bring to a gentle bowl.
5. Turn to low heat and cook until the sauce thickens.
6. Dish out and serve.
