Sour Tofu Stir-fry Recipe
This hearty and tasty Chinese tofu recipe features a terrific combination of chili powder, ketchup, and tofu. It is simple to master and perfect for any party.

Serves 2
Ingredients:
7 oz./ 200 g firm tofu
1/2-1 tomato
1 tbsp. chopped coriander leaves
4 cloves curshed garlic
1 tbsp. chopped scallion
1 tbsp. minced fresh ginger root
2 tbsp. vegetable oil for stir-frying

Seasonings:
1 tbsp. ketchup
1 tbsp. chili bean sauce
1 tbsp. rice vinegar
1 tbsp. chili powder
1 tbsp. sesame oil
1 tbsp. light soy sauce, low sodium
1 tbsp. ground black pepper
1 tbsp. salt, or to taste
Directions:
1. Cut tofu and tomato into small cubes, about 1-inch long, place them on a plate for later use.
2. Preheat a wok over high heat for 1 minute before adding 2 tbsps. vegetable oil, heat until hot, then saute chili bean sauce briefly until aromatic, which will take about 30 seconds, do not brown.
3. Then add 2 cups water and 2 tsp. salt, reduce heat to low and bring to a simmer until the sauce thickens.
4. Spoon the thickened sauce over tofu cubes evenly, then add tomato cubes, coriander leaves, scallion, ginger and garlic, stir in all the seasonings, combine to mix well.
5. Taste and season with salt if necessary. Serve warm or cold.
