Tofu and Slamon Filet Recipe
This simple tofu salmon filet recipe is perfect for any party, and only takes 15 minutes to make.

Utensils:
Wok, colander, mixing bowl, serving bowl.
Serves 3
Ingredients:
7oz. / 200 g firm tofu, cut into cubes
7oz. / 200 g center-cut salmon filets, boneless, skinless
1 bunch scallion, cut diagonally into 1 inch strips
2 garlic cloves, minced
3 red bell pepper, cut in half, seeded, cut into bite-sized pieces.
1 tbsp. minced fresh ginger
2 tbsp. vegetable oil for stir-frying

Seasonings:
1 tbsp. light soy sauce, low sodium
1 tbsp. rice vinegar
1 tbsp. white sugar
1-2 tbsps. water
1 tbsp. cornstarch, mixed with 4 tbsps. water
Marinade:
1 tbsp. Chinese rice wine, or dry sherry
1-2 tbsp. light soy sauce, low sodium
1 tbsp. salt, or to taste
1 tbsp. white sugar
1 tbsp. cornstarch
Directions:
1. In a mixing bowl, gently combine together salmon filets and the marinade, let them stand for 30 minutes before use.
2. Put a large pot of water on to a boil, add tofu cubes and cook briefly, about 1 minute, then drain tofu thoroughly in a colander, set aside for later use.
3. Preheat a wok over medium high heat for 1 minute, saute scallion, ginger and garlic with 2 tbsps. vegetable oil until aromatic, about 30 seconds, do not brown.
4. Then put salmon filets into the wok, stirring, add 1 tbsp. light soy sauce, 1 tbsp. rice vinegar, 1 tbsp. white sugar and 1-2 tbsps. water, keep stirring until well mixed.
5. At last, add cornstarch water mixture and tofu cubes, reduce heat to low and simmer until the sauce thickens.
6. Turn off the heat, transfer them into warmed serving bowls, let cool for a couple of minutes before serving.
