Vegetarian Crispy Tofu Recipe
This is a fantastic vegetarian recipe, the tofu is full flavored as well as crispy outside. And it only takes 10 minutes to cook.

Utensils:
Wok, kitchen paper, serving plate.
Serves 2
Ingredients:
1 block firm tofu, about 200 g / 7 oz.
2 tbsps. ketchup
1/2 cup cornstarch
1 tbsp. white sugar
1 tbsp. rice wine, or dry sherry
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl.
Enough vegetable oil for deep-frying
Directions:
1. Cut tofu into small cubes, then drain them well before use according to the tips below.
2. In a plate, coat the tofu evenly with cornstarch.

3. Heat enough vegetable oil in a wok until it is shimmering on the bottom, but not yet smoking, deep fry tofu cubes over medium high heat until golden brown, then drain in a colander, set aside in a plate for later use.

4. Pour off all but 2 tbsps. vegetable oil in the wok, saute 2 tbsps. ketchup, 1 tbsp. rice wine, and 1 tbsp. white sugar until aromatic, about 1 minute.
5. Swirl into the cornstarch and water mixture, stir briefly until the sauce thickens.

6. Remove to a serving plate, then spoon the sauce over the tofu, serve hot.

Tips:
How to drain tofu before using:
1. Cut tofu into uniform size pieces, about 1-inch length.
2. Lay a kitchen paper out on a big serving plate, arrange tofu cubes on it neatly, then cover another kitchen paper on them.
3. At last, put a book or any other heavy things on it, let sit for 20 minutes until needed.
4. During this period, you may find water leeks out of it, no worries, drain it by tiltting the plate if needed.
