How to make Wonton and Noodle
This recipe will show you how to enjoy wonton and noodles at the same time.

Cook time: 30 minutes
Utensils:
Wok, rolling pole, bowl.
Serves 1
Ingredients:
1 raw egg, beaten
6-12 cups water
10 oz. / 300 g flour
5 oz. / 150 g noodle
5 oz. / 175 g ground pork
1 tbsp. minced fresh ginger
1 tbsp. chopped scallion
3-5 slices barbecued meat
3 stalks spinach or other greens
2 tbsps. vegetable oil for stir-frying
Seasonings A:
1 tbsp. salt
1 tbsp. ground black pepper
Other seasonings:
1 tbsp. light soy sauce
1 tbsp. salt, or to taste
1 tbsp. chili bean sauce, optional
1 tbsp. sesame oil
Directions:
1. Put ground pork, chopped scallion, ginger and seasoning A in a bowl, stir to mix everything together.
2. Put flour in a big basin, drizzling 1/2 cup of water in occasionally while you making dough, knead it for 3-5 minutes. Cover it with a wet cloth and leave to rise for 1-2 hours.


3. Roll out the dough to a large flat bread with a rolling pole.


4. Fold in half, then cut it into 8-10cm. / 3-inches width strips, then cut each strip into squares or trapezoids according to the picture.


5. Spread the wrapper square or trapezoid across your palm, place a small clump filling in the center.

6. Fold the wrapper according to the picture ,then fold again.


7. Nip the two thick edges together with your forefinger and thumb.

8. Arrange them on a clean and flat place for later use, toss pinch of flour to prevent from sticking.
9. In a wok, saute 1 tbsp. chopped scallion with 2 tbsps. vegetable oil until aromatic, about 20 seconds, drizzle 1 tbsp. light soy sauce over it, then pour 5-10 cups water into the wok, bring them to a boil.
10. Toss the noodle into boiling water, gently separate the noodle strands with the chopsticks, turn off the heat until soften, about 3-5 minutes. Add wonton back into the wok in question, continue to cook over medium high heat for about 3-5 minutes.
11. Then add in the beaten egg, spinach, barbecued meat and chili bean sauce, continue to cook for another 1-2 minutes, or until cooked.
12. Dump into a bowl, drizzle 1 tsp. sesame oil lightly over and serve hot.

Tips:
1. At Step 4, you'd better toss pinch of flour on the flat bread to prevent sticking.
2. You can change the ratio of noodle and wonton according to your needs.
