Barbecued Meat Pumpkin Stir-fry Recipe
In this tasty recipe, pumpkin and barbecued meat combine to make a really refreshing dish, one taste of it, then you will know why it is such a great.

Serves 2
Ingredients:
9 oz./ 250 g pumpkin, cut into 1-inch cubes
6 oz./ 170 g barbecued meat, cut into 1-inch cubes
3 slices ginger, peeled
2 cloves garlic, minced
1 tbsp. oyster sauce
1 tsp. salt, or to taste
5 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high heat for 1 minute before adding 3 tbsps. vegetable oil, when the oil is hot, stir fry barbecued meat cubes for about 2 minutes, then set aside for later use.

2. Pour off the excess oil, leaving about 1 tbsp. oil in the wok, saute the ginger and garlic until aromatic, about 20 seconds, do not brown. Then add the pumpkin cubes, continue to cook over medium high heat for a further 3-5 minutes.

3. Add the meat back into the wok in which it was cooked, add 1-2 cups water and 1 tbsp. oyster sauce, cover and let simmer over low heat until the pumpkin cubes soften.

4. Taste and season with salt as desired, mix well, remove to a plate and serve hot.
