Beef and Beans Stew Recipe

Ingredients:
100 g soaked beans
2 tbsps. ketchup
1 tbsp. shredded cheese
1 tbsp. chopped scallion
2 tbsps. vanilla extract
2 tbsps. chili powder
2 tbsps. cumin powder
1-2 tbsps. salt, or to tase
1/2 cup wine, or dry sherry
1 onion, peeled and cut into small cubes, about 1/2-inch length
7 oz. / 200 g ground pork, cut into equal measure
1 can diced tomatoes, or 1 tomato, cut into 1-inch cubes

Directions:
1. Preheat a wok over medium heat for 30 seconds, stir fry ground meat until white, do not brown, add onion cubes and stirring until soften, about 2 minutes.

2. Add 1/2 cup wine as you stir fry, then tomato cubes, and other seasonings, stirring and tossing over medium heat until well mixed.

3. Then add beans and 1/2-1 cup water or chicken stock, bring to a gentle boil, and then reduce to simmer until the beans are tender.


4. Ladle into warmed bowls when cooked, top with a sprinkling of cheese and chopped scallion before serving.
