Crispy Sour Lotus Root Recipe
This recipe features a delicious contrast between the fermented vegetable and the crispy lotus root. You only need a couple of easy-to-get ingredients, and the finished one is perfect.

Ingredients:
2 oz. fermented vegetable, chopped fine
1/2 lotus root, about 4 oz., peeled and cut into 1-inch cubes
2 tbsps. scallion, chopped fine
1 tsp. chicken essence
Salt to taste
2 tbsps. vegetable oil for stir-frying

Directions:
1. Soak the lotus root cubes in water for about 20 minutes before cooking. Then drain well and set aside for later use.
2. Preheat a wok over high for 1 minute, then heat 2 tbsps. vegetable oil to a until hot, stir fry fermented vegetable for about 1 minute.

3. Then add chopped scallion, stir fry over medium heat for 30 seconds, then the lotus root cubes and 1/2 cup water, continue to cook them all for another 3 minutes.


4. Taste and season with salt and chicken essence, mix everything well, then transfer to a serving plate and serve hot.
