Egg and Bitter Melon Stir-fry Recipe
Made with egg and bitter melon, this is a quick and easy Chinese stir-fry recipe for busy weeknights.

Serves 2
Ingredients:
2 eggs, beaten, whisked lightly
1 bitter melon, seeded, sliced well
1 tbsp. chopped scallion
1-2 tsp. chili bean sauce
1-2 tsp. salt, or to taste
2-4 tbsp. vegetable oil for stir-frying

Directions:
1. Bring a large pot of water to a boil, blanch bitter melon for 1-2 minutes until the color turns jade green, drain well and set aside.

2. Preheat a wok over high heat for 1 minute before adding 2 tbsps. vegetable oil, heat until hot, then saute scallion until aromatic, about 20 seconds, swirl into the egg mixture, stir fry over medium heat until egg have set, remove them from the wok to a plate for later use.

3. Heat another 2 tbsps. vegetable oil in the wok until hot, add blanched bitter melon slices, stir fry over medium heat until soft, about 1-2 minutes.

4. Put cooked egg back into the wok, add chili bean sauce, continue to cook, correct for salt when nears done.

5. Serve on a plate.
