Fuzzy Melon Mushroom and Carrot Stir-fry Recipe
Fuzzy melon mushroom and carrot stir-fry - A delicious, fast and easy Chinese recipe that you’ll want to have plenty of bread ready for!

Ingredients:
1/3 cup ground beef or pork
1/3 fuzzy melon, cut into small cubes
1/2-1 carrot , cut into small cubes
4 black mushrooms, cut into small cubes
1 tbsp. chopped scallion
1 tbsp. ground black pepper
1 tbsp. ground cumin
1 tsp. salt, or to taste
1 tbsps. vegetable oil for stir-frying

Directions:
1. Preheat a wok over high for 1 minute, add 2 tbsps. vegetable oil, swirl to coat surface until hot, saute the chopped scallion briefly until aromatic, about 20 seconds, then add ground meat before it begins to brown, stir fry over medium heat until the meat changes color and is nearly cooked through.

2. Sprinkle the ground cumin and black pepper over the meat as you stir fry, add mushroom and carrot cubes back into the wok in which it was cooked, keep cooking over medium heat, add 2 tbsps. water if necessary.
3. Add the fuzzy melon cubes into the wok when the carrot cubes are tender, stirring to mix everything together, season with salt as desired.
4. Remove from the wok to a plate, serve hot.
