Ingredients:
4 chilis, seeded
1 tbsp. Szechuan peppercorns
7 oz./ 200 g green beans, remove the string, cut into 1-inch sections
1 tsp. salt, or to taste
5 tbsps. vegetable oil

Directions:
1. Place a wok over medium-high heat, add 5 tbsps. vegetable oil, heat until it is shimmering on the bottom and very hot but not yet smoking, add the green beans and deep dry over medium heat for about 1-2 minutes.

2. Drain them thoroughly in a colander, and then place on a plate for later use.
3. Pour off the excess oil but 2 tbsps. oil from the wok, heat till hot, saute peppercorns and chilis briefly until aromatic, about 1/2 - 1 minute, do not brown.

4. Place the cooked green beans back into the wok and stir briefly to mix everything together, taste and season with salt as desired.
5. Serve hot.
