Meat Celery Recipe
When your brain wants celery, but your heart wants meat, this simple Chinese food recipe is perfect for you.

Wok, bowl, serving plate.
Serves 2
Ingredients:
3.5 oz./ 100 g Lean pork, cut into thin strips
14 oz./ 400 g celery, discard leaves, rinse well and cut diagnoally into thin strips.
2 hot red peppers, seeded, cut into thin strips
2 slices fresh ginger, cut julienne
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Seasonings A:
1 tsp.salt, or to taste
1tsp. cornstarch
Directions:
1. Gently combine pork strips and seasoning A in a bowl (P1), then in a wok stir-fry the meat with 2 tbsps. vegetable oil, cook until the pork changes color and is nearly cooked through (P2), set aside for later use.

2. Put a large pot of water on to a boil, blanch the celery strips briefly until brighter green, about 30 seconds (P4). Then drain well in a colander and put into a bowl of cold water to stop the cooking and keep crispy.
3. Add cooked pork strips, hot red peppers, ginger strips, celery, and pinch of salt in a mixing bowl, stir properly with chopsticks, serve on a plate then (P5).
