Peanut-Glazed Eggplant Recipe
Chicken marinade and peanut butter is a teriffic combination, which features a quick sauce that bursts with flavor, try this peanut-glazed eggplant and enjoy Chinese food at home.

Ingredients:
1 eggplant, cut into strips
2 tbsp. peanut butter, as needed
2 tbsps. chicken marinade, as needed

Directions:
1. In a bowl, sprinkle eggplant strips with pinch of salt and let sit for 15 minutes before use.
2. Bring a large pot of water to a boil, place the eggplant strips on the basket, steam over medium heat for about 10-15 minutes, then squeeze out the extra water and put on a plate.

3. Add 2 tbsps. peanut butter and 2 tbsps. chicken marinade in a bowl, stir clockwise until well mixed.

4. Pour the sauce over the plate over all the eggplant strips, leave for 3 minutes to soak in the flavor before serving.
