Potato Broccoli Green Peas Stir-fry Recipe

Serves 2
Ingredients:
2 potatoes, skinned, cut into small cubes
100g/ 3.5 oz. green peas, remove the strings, cut into sections
200g/ 7 oz. broccoli, rinse well, cut into sections
3-5 chilis, chopped
2 tbsps. curry powder
1 tsp. salt, or to taste
5 tbsps. vegetable oil for stir-frying
Directions:
1. Bring a large pot of water to a boil, blanch broccoli for about 1 minute, until jade green, drain well in a colander and set aside.

2. Preheat a wok over medium high heat for at least 30 seconds, then add 5 tbsps. vegetable oil, swirl to coat the surface and bottom, add potato cubes when hot, pan dry over medium high heat until brown golden, drain well and set aside.

3. Pour off all but 2 tbsps. vegetable oil from the wok, heat till hot, saute chilis until aromatic, do not brown, stir fry green peas over medium heat till cooked, put broccoli and potato cubes back into the wok, keep cooking.

4. Stir into curry powder and 2 tbsps. water, cook until the sauce thickens, season with salt and mix well.

5. Remove from the wok to a plate, serve hot.
