Potato and Pork Stir-fry Recipe

Ingredients:
3 oz./ 50 g pork slices
1-2 potatoes, peeled, sliced thin
1 green pepper, stemmed, cut into cubes
1 tbsp. chopped scallion
1 tbsp, minced ginger
1 tbsp. minced garlic cloves
1 tbsp. light soy sauce
1 tbsp. oyster sauce
3 tbsps. vegetable oil for stir-frying
Marinade:
1 tbsp. Chinese cooking wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. cornstarch
3 slices ginger
Directions:
1. In a mixing bowl, gently combine pork slices with the marinade.
2. Preheat a wok over high heat for 1 minute before add 3 tbsps. vegetable oil, heat until hot, then stir fry the marinated pork slices over medium high heat until lightly brown, then remove to a plate for later use.

3. Saute chopped scallion, ginger and garlic cloves with the remaining oil in the wok, about 20 seconds, do not brown.
4. Add into potato slices, keep stirring, stir into light soy sauce, season with salt.
5. Add stir-fried pork slices, green pepper cubes, and oyster sauce, stir briefly until cooked.

6. Dish out and serve hot then.
