Spicy Potato Strips Stir-fry Recipe
Spicy Potato strips stir-fry recipe is a traditional Chinese food as well as one of the best known ones, it features crispy and spicy potato strips, and after one taste you will know why it’s such a favorite.

Utensils:
Wok, bowl, plate.
Serves 2
Ingredients:
1-2 potatoes, skinned
1 red pepper, seed, cut into thin strips
1 green pepper, seed, cut into thin strips
3 garlic cloves, minced
1 tbsp. Szechuan peppercorn
1 tsp. salt, or to taste
1 tbsp. rice vinegar, or dry sherry
2 tbsps. vegetable oil for stir-frying
Directions:
1. Peel the potatoes, cut into thin matchstick sized strips, soak in cold water for 20 minutes before use.
2. Preheat a wok over medium high heat for at least 30 seconds before adding 2 tbsps. vegetable oil, saute peppercorns briefly until the oil is hot, do not brown, about 30 seconds, then drain them with a colander and discard the peppercorns.
3. Put green and red pepper, garlic into the wok, saute until fragrant, about 30-50 seconds.

4. Stir fry potato strips over medium heat, toss gently once or twice while cooking.

5. Sprinkle 1 tbsp. rice vinegar over them when turn out tender but still crispy.
6. Taste and season with salt as needed, stir briefly to mix everything together.
7. Remove from the wok to a plate, serve immediately.
