Red-cooking Winter Melon Recipe
Red-cooking winter melon is a famous Chinese food recipe, the winter melon is fully falvored, and it is simple to master as well.

Ingredients:
200 g / 7 oz. winter melon, skinned, cut into 1-inch cubes
5 black mushrooms
2 slices ginger, cut into strips
1 tbsp. minced garlic cloves
2 chilis, seeded
1 tbsp. chicken essence
1 tbsp. Szechuan peppercorns
1 tbsp. light soy sauce
1 tbsp. rice wine, or dry sherry
3 tbsps. vegetable oil for stir-frying
1 tbsp. cornstarch, mixed with 4 tbsps. water in a bowl
Directions:
1. Heat 3 tbsps. vegetable oil in a wok until hot, pan fry winter melon until golden brown, remove to a plate then.

2. Saute Szechuan peppercorns, ginger, and garlic cloves until aromatic, then add back winter melon and stir fry over medium high heat for 1-2 minutes.

3. Add black mushrooms, 1 tbsp. light soy sauce, 1 tbsp. rice wine, and chilis, pour into 1-2 cups water, cover and cook for 2-3 minutes.

4. Swirl into the cornstarch and water mixture, season with chicken essence, keep cooking until the sauce thickens.
5. Remove from the heat to a plate, serve hot.
