Red Pepper Beef Pie Recipe

This recipe features a terrific combination of crispy pepper and meaty beef, and its intense flavor and crispy texture go great with things like steamed rice, and pasta.

Cook time: 10 minutes

Utensils:
Oven, colander, spoon, plate, serving bowl.

Serves 2

Ingredinets:
1-2 cups ground beef
1 beaten egg, whisked lightly
2-5 sweet red pepper
1 tbsp. chopped scallion
1 medium size eggplant, peeled, cut into small cubes
1 tbsp. salt, or to taste
1 tbsp. ground black pepper
1 tbsp. light soy sauce, low sodium
Directions:
1. Put a large pot of water on to a boil, parboil the eggplant cubes over medium heat in the boiling water for about 2 minutes, or until tender.
2. Drain them well in a colander, chop into small pieces, and then squeeze out the excess water, in a big mixing bowl, combine with all the ingredients and seasonings except sweet red peppers, stir well to mix everything together.

3. Trim off the stems of the sweet red peppers and cut lengthwise in half, place the meat mixture into each with a spoon.

4. Preheat the oven to 375 Degree F, bake them until completely heated through and golden crispy on top, typically anywhere from 6-10 minutes.
5. Remove from the oven to a plate, let cool a few minutes, serve with your favorite sauce if desired.
