Sweet Sour Lotus Recipe
This flavorful lotus recipe is an easy, but impressive recipe, except the crispy taste of lotus, rice vinegar and red hot pepper do enhance the flavor of this classic Chinese dish.

Utensils:
Wok, colander, serving plate.
Serves 2
Ingredients:
1 lotus root, about 9 oz.
2 cloves garlic, sliced
2 tbsps. rice vinegar
3 slices ginger, minced fine
5 red hot peppers, chopped fine
1 tbsp. light soy sauce, low-sodium
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Peel and dice lotus root into cubes, soak in water for 20 minutes before cooking.
2. Preheat a wok over medium-high flame for 1 minute, add 2 tbsps. vegetable oil, heat until hot, saute ginger, garlic and red hot peppers briefly over medium heat, about 30 seconds, then add 1 tbsp. light soy sauce before they starts to brown.

3. Drain lotus root cubes well and add into the wok in which it was cooked, sprinkle 2 tbsps. rice vinegar over them, cook them over medium heat for 2 minutes, or until desired doneness is reached.

4. Remove from the wok to a plate, and serve hot.

Tips:
At step 3, rice vinegar works to keep the crispy of lotus root, but you are supposed to add rice vinegar at the same time adding lotus root cubes.
