Tomato Potato with Salmon Stew Recipe

Ingredients:
1/2 onion, peeled, cut crosswise into thin strips
2 salmon steaks, about 1-inch thick, cut into 1-inch cubes
2 stalks parsley, cut into 1/3-inch pieces
2 tomatoes, peel and cut into small cubes
2 medium-sized potatoes, peel and cut into small cubes
1 tbsp. chopped coriander
3 tbsps. ketchup
1 tbsp. ground cumin
2 tbsps. vegetable oil for stir-frying

Directions:
1. Preheat a wok over medium heat for 1 minute before adding 2 tbsps. vegetable oil, swirl the oil to coat the surface until hot, but not yet smoking, add onion strips and cook until soften, then add potato, tomato cubes and parsley back into the wok, stir in 3 tbsps. ketchup, stirring and tossing to properly coat with the sauce.


2. Pour into 1/2-1 cup water, 1 tbsp. ground black pepper and salt as you would.

3. Bring to a boil, then reduce heat to simmer, add salmon steaks and chopped coriander, cook until the sauce thickens.
4. Ladle into warmed bowls and serve hot.
