Three Colors Veggies Stir-fry Recipe
This Chinese veggies recipe combines 3 easy-to-prep ingredients-green pepper, winter melon, and carrot-for an easy and refreshing course.

Cook time: 10 minutes
Utensils:
Wok, pot, colander, bowl, plate.
Serves 2
Ingredients:
1 green pepper, cut into thin strips
7 oz./ 200 g winter melon
1 carrot, cut into thin strips
1 tbsp. cornstarch, mixed with 2 tbsps. water in a bowl
1 tsp. salt, or to taste
2 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high heat for 1 minute before adding 1 tbsp. vegetable oil, swirl the oil around the wok until hot, then add winter melon, carrot, and green pepper strips, stir fry 1 minute and set aside.

2. Put them into a large pot of boiling water, blanch for 30-60 seconds, or until turns a brighter color, drain well and set aside.


3. In the wok, heat 1 tbsp. vegetable oil until hot, add back the blanched veggies and stir fry over medium heat for 2 minutes, taste and adjust seasoning as desired.

4. Give the cornstarch and water mixture a quick stir, then swirl into the wok, stir to thicken, cook briefly to mix everything together.
5. Remove from the wok to a plate, serve hot.
