Walnut and Veggies Stir-fry Recipe
A terrific way to enjoy fresh veggies, such as sweet potato, carrot, snow peas, onion, and green pepper, this authentic Chinese food recipe is simple to make and works every time.

Cook time: 15 minutes

Serves 2
Ingredients:
1/3 cup corn
1/3 snow peas
1 green pepper, diced
1/2 cup carrot cubes, about 1/2-inch length
1 onion, peeled, cut into 1/2 inch cubes
3 tbsps. walnut-meat, cut into pieces
1/2 cup sweet potato cubes, about 1/2-inch length
1 tsp. salt, or to taste
1 tbsp. ground black pepper
2 tbsps. vegetable oil for stir-frying
Directions:
1. Preheat a wok over high for 1 minute, then add 2 tbsps. vegetable oil and swirl around to coat surface, when hot, saute onion cubes, add walnut meat, stir over high heat for 30-40 seconds, do not brown.

2. Add all the other ingredients back into the wok in which it was cooked, season with salt and black pepper.

3. Reduce heat to low, add 1-2 tbsps. water, cover and let cook until all the vegetables are set.
4. Serve hot on a plate.
