Winter Melon with Meatballs Stew Recipe

Ingredients:
7 oz./ 200 g minced pork
7 oz./ 200 g winter melon, peeled, cut into chunks
2 ginger slices
1 tbsp. chopped scallion
2 garlic cloves, sliced
1 tbsp. rice wine, or dry sherry
1 tbsp. light soy sauce
1 tbsp. chicken essence
1 tbsp. cornstarch
1 tsp. salt, or to taste
2 tbsps. vegetable oil

Directions:
1. Combine minced pork with 1 tbsp. light soy sauce, 1 tbsp. rice wine, or dry sherry, 1 tbsp. cornstarch, and 1 tsp. salt in a mixing bowl, let them marinate for about 10 minutes, and then form into tiny meatballs of about 1-inch diameter.

2. Preheat a wok over high heat for about 30 seconds before adding 2 tbsps. vegetable oil, then swirl to coat surface till hot, saute garlic cloves and ginger slices over medium high heat until aromatic, about 20 seconds, but do not brown.
3. Add 3-5 cups water into the wok in which it was cooked, and then bring to a boil, put back the meatballs and cook for about 10 minutes, or until cooked.
4. Add winter melon when the meatballs nears done, then keep cooking until the winter melon are tender, season with 1 tbsp. chicken essence as you need.

5.Remove into warmed bowls, and sprinkling with chopped scallion before serving.
