Perfect as an appetizer, snack, or side, they pair wonderfully with ranch, spicy mayo, or remoulade.


Ingredients

  • 3-4 firm green tomatoes, sliced about ¼ inch thick

  • ½ cup all-purpose flour

  • 2 large eggs

  • ½ cup buttermilk (or milk with 1 tablespoon lemon juice)

  • ¾ cup cornmeal or panko breadcrumbs

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon paprika or cayenne (optional, for spice)

  • Cooking spray or oil mist

Instructions

  • Prepare tomatoes: Slice green tomatoes into ¼-inch thick rounds.

  • Set up dredging stations: Place flour in one bowl; beat eggs with buttermilk in a second; mix cornmeal or breadcrumbs with salt, pepper, and paprika in a third.

  • Coat slices: Dip each tomato slice first in flour, then the egg mixture, then the breadcrumb mixture, pressing gently to adhere.
