2 tbsp unsalted butter

Instructions

Prepare the Filling:
Melt butter in a large skillet over medium heat.
Add diced apples, brown sugar, cinnamon, nutmeg, and cloves.
Cook, stirring occasionally, for 8-10 minutes until apples are tender.
Remove from heat and stir in vanilla and nuts if using. Let cool slightly. -
Assemble Enchiladas:
Preheat oven to 350°F (175°C).
Spoon apple mixture evenly onto each tortilla.
Roll up tortillas and place seam-side down in a greased baking dish. -
Bake:
Bake for 15-20 minutes until tortillas are lightly golden. -
